Kitchen Renovations

Renovating is kind of a headache. Okay it is a major pain in the rear. I am happy that I will be getting some new appliances and counter here soon. My current stove is more than a little temperamental. The first time I used it I actually had smoke in the house and the fire alarm going off. This I believe was over frozen pizza. We have not had the best relationship since. You have to cook everything at exactly 350 degrees or less or that sucker will burn whatever your cooking. Plus the whole thing is lopsided making even cooking on the stove-top nearly impossible. I have tried to fix the burners which ended with even more crooked burners than I started with. Lets just say I am thrilled to throw that sucker in the Bermuda triangle outside of our house. Looking forward to labor day weekend when I can go catch a sale and find a home for my new stove.

Chicken Alfredo Lasagna

So I am going to attempt to make Chicken Alfredo Lasagna tonight. I have previously perfected my lasagna making skills and it is a regular in our dinner rotations. I wanted to try something more light and slightly healthier so I thought about trying chicken instead of pork and Alfredo instead of spaghetti sauce.

My plan of action is grill the chicken in some lemon juices and lemon pepper seasoning. Creating a Alfredo sauce with broccoli and carrots added as a vegetable side. Going to cook the noodles in a nice butter garlic water. Then cut the chicken into small pieces and add them to the sauce. I bought this cream cheese substitute (from Italy) which is apparently what they add to their lasagnas. Then having a layer of noddles, base layer of the cream cheese substitute, layer of sauce, layer of Parmesan,  layer of noodles, layer of sauce and cheeses. I am going to do a garlic croissant as a side.

Ingredients-

Chicken breasts (or strips)
5 cans of Alfredo sauce
4 packages of cream cheese
4 bags of shredded cheeses (assortments recommended mozzarella, Italian blend, cheddar)
Box of lasagna noodles
Butter
Lemon
Parsley


1. Cut up and grill chicken breasts in a large frying pan. Add seasonings and squeeze lemon over for taste.

2. Boil large pot of water and cook noodles until tender.

3. Place sauce in a separate pot (you can add veggies to sauce). Let simmer.

4. Add cooked chicken to sauce mixture.

5. Layer noodles, then add a cream cheese layer, place sauce mixture over cream cheese layer. Repeat layering. Place noodle layer on top.

6. Add shredded cheese layer on top noodle layer. Make sure noodles are cover entirely.

7. Bake in oven on 350 degrees until cheese on the top layer are golden brown.
